Are old layouts compatible with MFME 5? I want to get I'm a celebrity as I love this program, also a few crazy fruits machines. I want to see if pitch shifting is supported in the "uh oh" sound.

they are but when you exit the games you may want to re-save them to the newer fml file.

Most should be fine.
Celeb, appears to work fine. Casino Crazy Fruits, gives out a payout error, probably something in the config needs changing.
One thing to remember, is that certain machines, will not function correctly, until an update is made to the layout. Austin Powers for instance needs 4 lamps in parts to display, nudges up and down, knockouts and reel blast. As the older version of MFME, didn't support 4 lamps, it will still be imperfect on v5, until an update is done to the layout.
Like Casino Crazy Fruits, some machines, will need correct settings in the configuration menu to play and pay out correctly. People like vectra, have been updating some layouts, to correct such errors.

I have noticed on DIF, Monopoly club M1A has been updated and works fine. Will get celeb right now, just catching up on the real thing on ITV Hub. Only Ant and Dec machine I have is Saturday night takeaway.
